SUGGESTED CARE AND HANDLING

Potatoes come in many varieties and they all suit an equal variety of purposes. For the best results with your potatoes make sure you store them in a cool place with plenty of air circulation. You should avoid refrigerating potatoes as the starch in the potatoes will turn to sugar. Avoid green skin on our potatoes and all varieties should be firm to the touch.

Red Potatoes
Red Potatoes
Great for boiling, and also very popular oven roasted, red potatoes are extremely versatile and add color to any dish. Reds typically contain more sugar and less starch than other potatoes, making them a must for your potato salads.
White Potatoes
White Potatoes
The best quality white potatoes are firm, smooth-skinned and brilliant-white to cream colored. White potatoes should be firm and not tinted green. They are also versatile and can be baked, fried, boiled, roasted.
Russet Potatoes
Russet
Arguably the most recognized potato, Russets are ideal for baking and are good fried and mashed.† They are a high starch potato and will be light and fluffy when mashed. Recent studies have shown that Russets are high in antioxidants.
Yukon Golds
Creamy and buttery, Yukons are a favorite for delicious mashed potatoes. They are equally at home when baked or roasted. Did you know Yukon's are one of the few varieties actually identified by its name
Fingerling Potatoes
Fingerlings
A relative 'newcomer' on the potato scene, fingerlings obviously get their name from their looks. Fingerlings are a specialty variety and are loved for their flavor and the different colors and varieties. Delicious sautČed, boiled, steamed, grilled and fried.

POTATO HEALTH

Over the past several years, potatoes have had to overcome the low carb phase and many other diet trends. Not only have potatoes survived this threat, they have thrived!

WATCHING YOUR WEIGHTóAND HEALTH

Leading nutrition experts agree that weight gain is a result of consuming more calories than you expend, regardless of where those calories come fromócarbohydrates, protein or fat. Maintaining that important calorie balance is easier with a diet that is rich in a variety of fruits and vegetables as these foods tend to be low in calorie content, yet high in essential nutrients.

THE HEALTHFUL POTATO

Misinformation and misconceptions regarding the nutritional value of the potato abound. In fact, an average (~5.3 oz) potato with the skin contains:

  • •  45% of the daily value for vitamin C
  • •  as much or more potassium (720 mg) than either bananas, spinach or broccoli
  • •  trace amounts of thiamin, riboflavin, folate, magnesium, phosphorous, iron and zinc
  • •  all for only 100 calories and no fat.

And potatoes with the skin on are an excellent source of fiber. In fact, with 3 grams of fiber per serving, a potato equals or exceeds that of many "whole" grain products––whole grain bread, whole wheat pasta and many cereals.
