Red Onions
Red onions, also called Spanish onions, are medium to large onions that have purplish red skins and red-tinged white flesh with a mild, sweet flavor. They add great flavor, as well as beautiful colors to every dish. Other names red onions go by are sweet Italian onion, Italian red onion, Creole onion and red torpedo onion. Good-quality red onions will be firm, free of blemishes or mold spots and have even-colored, paper-dry skin. Some feel that sweeter onions will be flat-shaped from stem to root-end, not round. Store onions in a dry, dark, well-ventilated place; not in the refrigerator. Avoid: Avoid product that is soft, wet-skinned, bruised, has dark blemishes or spots of mold.

White Onions
White onions have both white skin and white flesh, tend to be sweet and mild in flavor. Good-quality white onions will be firm, free of blemishes or mold spots and have even-colored, paper-dry skin. Sweet Onions

When you want a sweet and mild onion (no tears) with a great onion flavor, you are in search of a sweet onion. They are also seasonal compared to the year round varieties, meaning sweet onions often arrive in the market quicker than other varieties. There are numerous sweet onions varieties and Grant J. In order to qualify as a ‘sweet’ onion, the brix (or sugar levels) need to be a minimum of 6%. Some varieties reach levels of up to 15% brix. In comparision, a ‘standard’ onion is typically in the 3%-5% brix range.
